I love to cook and make homemade meals. However, this heat has been crazy recently that I hate having the stove or oven going for long to make dinner. We have a lot of BLTs - they are probably one of my favorite summer time foods (along with tons of fruits and veggies). But I would love to add a few new favorites to our summer menu. Anyone got some great summer meals they would like to share?

mine is a simple one you can do on the BBQ in a tin foil pie pan cut potatoes thin a little thickerr than a potatoe chip,, add a can of kernel corn a can of muchrooms and a chopped onion then add about two tsp of butter and a squirt of BBQ sauce over with tin foil and cook on BBQ until the potatoes are soft.. its very good and make a quick side dish

One of our favorites (year round) is taco salad. I grew up eating this and it has been passed along to many friends and relatives over the years. Brown hamburger with S &P to taste. Drain, then add small can of diced green chilies, and one or 2 cans of black beans. Heat until it is all hot. Here are the rest of the ingredients, which you can either combine all together in one big bowl, except the tortilla chips, or you can put each in its own bowl and let everyone "build" their own salad. Chopped lettuce, chopped onion, diced fresh tomatoes, sliced black olives, shredded cheddar cheese, diced green bell pepper, diced avocado, tortilla chips (just crush a handful into your bowl), and salsa and sour cream to top it off.

This is really fast to make- I cut everything while the hamburger is browning, and then I usually mix the salad stuff in a bowl, keep the hamburger mixture in the pan, and have the chips, salsa, sour cream, and cheese separate, to be added by each person as they desire.

Corn cobs on the BBQ is one of my very favourite foods, and so we bbq a lot in summer. Usually I just do a lot of pasta, tacos, soups - anything I can do on the stove top so I don't have to turn the oven on. Last summer we had a heat wave where the average top temp for days was 110. I don't think we ate anything much then - couldn't move for the heat!

Our current favorite is grilled pizza. Take the dough and spread it on the grill. Let it cook for a while, flip it. Then add your toppings.

I swear it is THE BEST pizza I've ever had!

We have had grilled pizzas a couple of times this summer and we do LOVE them. One of our problems is that we have no shade what so ever and so on the really hot days my husband hates standing outside and grilling. :(

We cook on the grill all the time- but I have never heard of grilling pizza! We will have to give that one a try!
